The nose delivered salted caramel, marmalade on leather, tarry ropes and the surgeon’s cabin on an old sailing ship. The palate had an innocent side (strawberry jam, vanilla, sugared almonds) and a darker side of ginger snaps, spiced dark rum, salty manzanilla and tar, with a finish of pink peppercorns and red liquorice – a pirate’s tipple perhaps.
