White Peak Distillery

Dave Symes joined in February 2018 and now oversees all its spirits; the distillery was commissioned that year and filled its first casks in May.^4,12,14 In April 2021, 991 investors put more than £1.3 million into the business through crowdfunding, for a nine per cent stake.^13,15

It uses English barley; the batches grown in Derbyshire are floor-malted at Warminster, spread out and turned on a floor as the grain sprouts.^5,6 Fermentation with live brewer's yeast from Thornbridge brewery runs for 144 hours, which is meant to give the new spirit a soft stone-fruit character.^7,11,16 The distillery describes its new spirit as smooth and fruity.^7,16 Ex-bourbon casks make up a large majority of the barrel store.^2,5,17 All its whisky is distilled and matured on site, and some casks age in an upper warehouse, where warmer temperatures vary what the oak gives.^2,5,17
