It distils its whiskeys twice and to a higher proof, which the distillery says removes impurities and makes them more approachable.^2,12 In 2016 Jeff Quint tied their clean taste profile to fermenting off the grain: the wort, sugary water from the mash, is separated from the spent grain first.^2,12 The whiskey ages in rick houses, barrel warehouses with no temperature control, where Iowa's changing weather helps it take on flavour faster, the distillery says.^2,12,14 For finishing, a second spell in another cask, it has its own wet barrels from making wine, plus access to port-style wine barrels.^2,12,14
