Intense and full on, with big notes of dark chocolate, cherries and oak – we imagined eating a slice of black forest gateau in those typical cathedral-style warehouses of a sherry bodega. There was plenty of sherry goodness on the neat palate, with raisins, tobacco, toffee, caramel, old oak and old leather-bound cask ledgers.
