Blackcurrants were crushed by sticks of cinnamon and liquorice, before a drizzle of lemon juice, waxy green apple segments and a dollop of bread sauce. A warming fennel and sweet pea greeted the palate, with bergamot peel and a bouquet garni being used to spread jam on a wholemeal cracker.
