The nose combined spun sugar, toasted coconut and plum jam (burnt in the pot) with maple-cured bacon, tarry ropes and railway sleepers. The palate had deep, dark sweetness (molasses, muscovado, mince pies and burnt fruit cake), plus carbolic soap and balsamic on broccoli.
