This opened with a bouquet of croissants, lemon and lime peel, fruit leather and fresh strawberries. To taste, the bouquet shifted to a warm, wild Mediterranean fennel dipped in molten sugar, dusted with cardamom and poppy seeds, and served with lime cordial and strawberries.
