The aroma reminded us of an old yet bold oloroso, fruit and nut, dried apricots, old leather and crystallised ginger. “That’ll put hairs on your chest”; it was as powerful on the palate as on the nose. Water relaxed the atmosphere: a still pungent yet aromatic bouquet emerged, reminiscent of the sea breeze on the Andalusian coastline while soaking up the amontillado sherry and the sun.
