We borrowed a descriptor from the perfume industry: aquatic – a smell that reminded us of a mountain or a forest stream mingling with the spicy fusion of white pepper and basil. The great mouthfeel was “like a storm on the ocean”, a salty oiliness infused with apples, ginger and cloves, while in the finish we found a plum and thyme tart.
