The Panel awoke on an old Scottish island ferry, with coal soot cascading over salted raisin purée, toffee sauce and lapsang souchong tea. The palate was nutty and coastal, like dipping fried seaweed in olive oil and balsamic glaze, with sweet notes of marshmallow and ginger snaps to follow.
