A bouquet of bacon in a well-fired Scottish morning roll was embraced by seaweed butter, a dusting of sandalwood and a dollop of strawberry jam. The palate gave delicious contrast, delivering Caribbean rum punch, nutmeg shavings, grapefruit and lemon peels, madeira cake and cinnamon.
