In our mind’s eyes we saw lemon sorbet, shortbread, pineapple tarts, custard cream but the descriptor from one panellist, which certainly topped the bill for being the most imaginative, was “whipped egg whites and sugar known as ‘stiff peaks’, like the top of the newly built hotel in the St James’s centre in Edinburgh” (although also known by a far less favourable comparison!). On the palate there was peach iced tea, gooseberry jam and unsweetened apple juice all with a pinch of pepper.
