Our senses were taken out to sea with tarry ropes, seaweed and oyster shells before a complex amalgamation of black olives, dried rosemary and fragrant tobacco suggested excitement lay ahead. Sweet phenols in the mouth moved between charred heather, charcoal and burnt pine nuts coated with honey while scorched lemon peel sat on singed toast with cinnamon.
