Peated
We made Belgian waffles with melted white chocolate, vanilla ice cream and coconut flakes as well as almond tartlets with a plum cream and pineapple cubes. A robust taste neat of wood, leather and tobacco was complimented by a sweet and spicy orange liqueur, finishing with dark cherries soaked in brandy, muscovado sugar and tarragon to which we added a pinch of pink peppercorns all served with yoghurt ice cream.
