The neat nose bristled with sherry influences that suggested tangy dark-fruit chutneys, brown sauce, bruised apples, ginger wine, orange peels, mulling spices and a sumptuous leathery richness. We also got plenty of freshly baked brown bread, treacle cake, tobacco and black miso.
