A fragrant combination of tamarind, galangal and star anise suggested a scene from Thailand with further aromas of cinnamon, lychees and crushed fresh mint. Thai basil and star anise then introduced a palate bound by wasabi and pink peppercorns before a deluge of sweetness merged vanilla custard and coconut with fruity quince jelly, lavender and oak.
