The nose gave a real blast of the outdoors – hay, heather and honeysuckle, elderflower, nettles and mint – along with honey, dried pineapple, pain au chocolat and a suspicion of putty. The palate was also floral and herbal, with cloudy lemonade and sugar-shelled chocolate confectionery, waxed jackets and oiled wood, before a warming finish of black pepper, ginger and wasabi.
