Aromas of coastal herbs and flowers, wet rocks, white sand and turquoise water conjured up the serene setting of the perfect Scottish beach. On the palate, we found wonderful herbally infused peat emanating from gently sweet, cured smoked trout and lemons preserved using smoked sea salt.
