A wave of coconut washed over peaches, cherries and baked apples as a dusting of icing sugar settled on layers of marzipan and vanilla sponge cake. Fruit syrup sweetness laced the tongue along with sherry trifle and Mānuka honey before bitter orange and oak tannins joined the herbal influence of dry vermouth.
