The nose opens up gradually to polished wood and hay, spun sugar, brandy soaked raisins, grilled pineapple, oranges and cinnamon. The neat palate is quite a lively bundle of tastes – pine wood shavings, rhubarb crumble with custard, honey drizzled over apple slices and marmalade melted over pan-fried duck; a kick of chilli to finish.
