The nose found a raft of elegant sweetness (sugary pastries, vanilla, caramelised pear) tossed in the thundering surf of seaweed, iodine, salt air and peat smoke. With water it turned into a picture of a Danish fisherman, chewing liquorice and drinking tea - cigarette ash, singed hay and tarry ropes on a wooden deck – we loved it.
