Highland, Eastern Like truffle hounds, our panellists sniffed out polished wood, spun sugar, fruit cake, plum jam, salty popcorn and chocolate-covered marzipan – not much smoke. Smoke did emerge on the palate though – with crispy seaweed and crispy duck in plum sauce.
