The nose conjured leather boots on a pine table and a bowl of zingy, tangy Sicilian lemons and blood oranges. The flavours were curious but congenial – gin and tonic with lemon, passion-fruit, mango and lime sorbet and hints of grass and thyme; finishing with pencil ends, wasabi, pepper and citric peel.
