After 29 years in ex-bourbon wood, we transferred this into a first-fill Spanish oak Oloroso hogshead. The imprint is obvious – a nose that wafts elegant wood fragrances, Szechwan peppercorns and cashews, chocolate cake, sweet chilli sauce and balsamic glaze on watermelon.
