Teeling Whiskey Distillery

It buys its malted barley from Minch Malt (Boortmalt Ireland).^2,12 It uses an onsite well to reduce water use, and it harvests rainwater.² In 2015 Difford's Guide counted four fermenters: a pair of wooden washbacks and two stainless steel fermenters.^9,13,14 In 2016 the wooden fermenters were Oregon pine.^9,14 In 2015 fermentation took 2 to 3 days; in 2017 it ran 24 hours in the wooden washbacks, then 48 hours in steel.^13,14 Its stills make single malt and pot still whiskey, distilled three times, and in 2020 Teeling again described triple distillation at its Dublin distillery.^13,14,15 In 2015 a shell-and-tube condenser cooled the wash still's vapour into low wines, an intermediate distillate of about 30% alcohol.¹³ In 2015 Difford's Guide called the new spirit sweet and fruity, and linked this to acids in the wash, which give more esters.¹³ In 2015 the spirit aged on the Cooley Peninsula, a little over an hour north of Dublin, near the family's former distillery.^11,13,14 The casks were stored on pallets, six casks to a pallet and six pallets high.^11,13,14

Bacardi bought a minority stake in the Teeling Whiskey Company in June 2017.^5,16 It raised its stake to 40% in 2018 and became the majority shareholder in 2022, while Jack and Stephen Teeling kept part of the business.^5,6,17 On 23 June 2026 Bacardi Limited became sole owner, and Jack and Stephen Teeling stayed on as advisors.^5,6
