A corset factory in a dry town
Warren, a prohibitionist, made corsets there with turkey feather bones instead of stiffer whalebone, and through his influence Three Oaks went dry.1,4,5
Journeyman Distillery makes organic, kosher spirits in the old Featherbone Factory in Three Oaks, Michigan, where distilling began in 2011.1,2,3 E.K. Warren built the factory in 1883 to make corsets and buggy whips.1,4,5 Bill and Johanna Welter founded Journeyman in 2010 and opened a second site, The American Factory, in Valparaiso, Indiana, in 2023.1,6,7
In early 2010 Bill Welter spent time at several Tasmanian distilleries to learn distilling, including eight weeks at Nant.1,5 That summer he distilled Journeyman's first batch of rye whiskey with Robert Birnecker at Koval, in Chicago's Ravenswood neighborhood.1,2,8 Indiana then made distillers sell through a distributor and barred bars on site, so in 2010 Bill and his father, Chuck, bought the middle of the Featherbone Factory instead.1,9,10
Renovations finished in 2011, distilling began, and the tasting room opened.1,2,3 By 2015 the original still was at capacity, so Journeyman took over the northern half of the factory and quadrupled its production capacity.1,11
In 2013 Indiana passed the Artisan Distiller's Permit, letting distillers sell directly to consumers.5 In 2018 Journeyman paid to haul its waste to LaPorte and Niles, since the Three Oaks system could not handle it.12 It put plans to expand in Three Oaks on hold and began planning a site in Valparaiso, Bill Welter's hometown.12 On 3 December 2021 it broke ground on turning the abandoned Anco windshield wiper factory there into a 140,000-square-foot site with plans for a distillery, brewery and restaurant.13,14 The American Factory opened in 2023 with a restaurant and event spaces; brewing and distilling came in a later phase, on a 35-foot-tall Vendome copper column still.6,7,15 In November 2023 Gregory Wynnyk, formerly distillery manager at Alberta Distillers Ltd., was named director of brewing and distilling for both sites.9
Water for production comes from the aquifer beneath Three Oaks.16 In 2021 it stored up to 7,000 barrels of whiskey on site and in other nearby buildings.10 By 2025 it had three named stills in Three Oaks: Willy Wonka, Tassie and Ethel.15
