Before the new plant
In 1881 Max Selliger and his business partners built the Astor and Belmont distilleries here.3,4 In 1897 Isaac Bernheim, who came from Paducah, Kentucky, built his own distillery in Louisville.2,3
Heaven Hill's Bernheim Distillery is a large whiskey plant in Louisville that opened in 1992.1,2 Distillers have worked on its site since 1881.3,4 Heaven Hill bought it in 1999, after a fire destroyed its own distillery in Bardstown.1,3,5
In 1991 the old Bernheim Distillery was torn down to be rebuilt as the New Bernheim Distillery.4,6 United Distillers, then owned by Guinness, opened the large new plant on West Breckinridge Street in 1992.1,2 That year United Distillers stopped distilling at Stitzel-Weller Distillery and moved that production here.10,11 In 1997 Guinness merged with Grand Metropolitan, and United Distillers became Diageo.1,2,9
Heaven Hill bought the idle plant on 28 April 1999, nearly three years after the 1996 fire.1,3,5 It could then make 100,000 barrels a year, and it took over Heaven Hill's distilling while aging, bottling and shipping stayed in Bardstown.2,3,5 Master distiller Parker Beam added copper to the tops of the stills and copper mesh inside the two doublers, which binds sulfur notes in the spirit.2,3,5 In 2007 Heaven Hill doubled fermentation and added a second shift, lifting output by 100,000 barrels to 200,000 barrels a year.3,5 By 2014 four more fermenters and a third work shift took production to 300,000 barrels.3,5 In 2017, under master distiller Denny Potter, a $25 million expansion added a 66-inch column still with a doubler, or thumper, four more fermenters and a new boiler.3,5,12 The plant could then fill about 400,000 barrels a year and made all of Heaven Hill's bourbon and rye whiskies.3,5,12 In January 2019 Conor O’Driscoll became master distiller and began leading the distilling and warehousing teams at Bernheim.13
The mash starts with Kentucky limestone water.14 It ferments in 17 fermenters, and each batch takes four to six days.5,14 The plant has 3 copper column stills, each 70 feet tall, with steam fed in at the bottom.5,14 Vapour from each still passes into a thumper, which raises its strength, and then a condenser cools it into 140 proof spirit.14
