Roseisle Maltings, on the distillery site, had made malt since the early 1980s, with a reported capacity of 35,000 tonnes a year.4 In November 2025 Diageo paused it until at least June 2026, citing falling demand, but said the maltings were not closing for good.4
Its malt is not peated.1 Its water comes from a borehole.1,7 Fermentation takes place in 14 steel washbacks, the tanks where wort, the sugary water from the mash, becomes wash, a kind of beer.1,8 Fermentation lasts at least 75 hours, and more than 90 hours for a lighter spirit.1 It has 7 wash stills for the first distillation and 7 spirit stills for the second.1,7 The stills are a plain shape and heated by steam.1 Slow distillation with air rests and copper condensers give a light, grassy spirit, while stainless steel condensers, with less copper contact, add weight.1
