In celebration of the Highland Whisky Festival 2021 We all looked at each other and nodded, yes there is a hint of smoke – not much but noteworthy, maybe like a wax jacket which hung in a room with a burning peat fire. On the palate - delicious hot-smoked salmon and parsley fishcakes with a zingy lemon mayonnaise dip.
