Chita Distillery is a grain whisky distillery that Suntory and the Zen-Noh farm cooperative group set up together in 1972, as Sungrain Chita Distillery.1,2,3 It makes grain whisky mainly from corn in a continuous column still that allows for three types.3,4,5 Much of its spirit goes into Suntory blends such as Hibiki and Kakubin.1,3 In 2022 it added a Coffey still to create new kinds of grain spirit.1,6,7

Delicate and refined, it combines green tea, apple and pear compote, vanilla, and fresh citrus, with lively menthol and resinous wood.
Lychee and honey.
Its main column still has 4 columns, runs 24 hours a day for months once started, and makes heavy, medium and clean types by using different columns.3,4,5 It has 2 continuous stills for grain whisky and 12 fermenting vessels, called washbacks.7 It has no warehouses, so its new spirit ages at Suntory's Yamazaki and Hakushu distilleries and its Omi ageing cellar.4,5,7 The newer still, a Coffey still, began full operation in July 2022 and tends to keep more of the grain's flavour than the earlier continuous still.1,6,7
