Building on Whisky Lane
A fundraising round aimed at £1 million raised close to £2 million, so the team decided to build a bigger distillery.7 By July 2023, 180 private individuals owned it, about a quarter of them Shetlanders.7 By then work was under way to renovate the workshop, and the stills had been ordered.7
Stills from China
In February 2024 master distiller Ian Millar, once Glenfiddich's global brand ambassador, planned long fermentations, slow distillation and American and European oak casks.8 He planned a twist on a typical Speyside malt, with a spirit still (second distillation) the same size as the wash still (first distillation) for more copper surface.8 Two 4,000-litre copper malt stills, sourced from China, were installed by August 2024, helped by £250,000 from Highlands and Islands Enterprise.
