Starting out in Seattle

A nice dram, far more elegant than what I’ve had from other American single malts, with a subtle peaty hint as a welcome asset.

Its water comes from the Cedar River watershed.10,12,13 It gets malt from Skagit Valley Malting, and the equipment list on its old website also named Bairds, Briess and other maltsters.10,14 The wort, sugary water from the mash, ferments in 5 washbacks, or fermentation tanks, each holding 10,000 litres.3,10,15 The equipment list on its old website said the washbacks were stainless steel.10 In 2015 its wort fermented for six days.10,13 The old equipment list gave 72 hours for the first fermentation, then 48 hours of a second stage and chilling.10,13 It also said steam coils heated both stills, each with an onion-shaped body under a tall, column-shaped neck; the spirit still's neck had no plates.10
In 2015 it first distilled heritage barley varieties, chosen for flavor rather than yield.2 In 2016 it made its first batch of peated malt with Skagit Valley Malting, while working with a peat bog in Shelton, Washington, to source peat locally.8 Its Washington peated malt has 8-12 ppm of phenols, a measure of the smoky compounds that peat smoke leaves on malted barley.16,17 Its Flagship whiskey also uses some heavily peated malt from Bairds in Scotland.16,17
Co-founder Emerson Lamb left the company in 2015.7,8 Rémy Cointreau closed its purchase of Westland on 6 January 2017, after signing an agreement to buy it.6,7,8 Shane Armstrong, on the team since its earliest days, became master blender in 2019.1 Hofmann left at the end of June 2023, and Tyler Pederson, on the team since 2013, became master distiller.1,18
In 2016 Westland joined other distillers to form the American Single Malt Whiskey Commission, to define and protect the category.2,8 Westland, Rémy Cointreau and XO Alambic petitioned in October 2017, and a US rule defining American single malt whisky took effect on 19 January 2025.19
In 2020 it bought an 80-acre farm in the Skagit Valley, 100 miles north of Seattle.14,17 The farm, west of Burlington, has rackhouses, warehouses where casks age, but no whiskey is distilled there.14,17 A second property it bought later has earthen-floored, dunnage-style warehouses holding more than 8,000 casks.5,17
